When you go to bolt them back up, if you put a wrap of electrical tape around each nut before you put them in the boxed end wrench, the tape will create a friction fit that will hold the nut solid while snaking the wrench back into the hole and until you can get the bolt started.

However, the driver side doesn't have that hole. On the passenger side, there is a hole in the front of the crossmember that you can get a wrench into to hold the nuts captive. Here's the cheaters way of removing the motor mounts. Just remember to apply exactly the same set up to your transmission mount point as well!!! We used a bit of chain to anchor against torque in the 70s and 80s (frame to the block on the drivers side) but I'm not sure thats even allowed still? It was olids or stock then and solids were radical to be sure. If its street first, strip 2nd then yea maybe stay stock rubber. Its the power you loose when you just let a healthy engine twist a bit. I agree you need to consider strip role #1 and street role #2 do justify it, but I don't think you need 700hp before figuring on a strategy of tightening things down a little. All due respect, but in heavy street type class cars, isn't the issue really more torque than HP? and the loss of torque there of? I've seen a lot of big heavy car engines flex pretty hard with "385 adv HP and 500 ftlbs" in near stock big blocks.
